Watermelon, Feta, and Cucumber Salad
A refreshing high-contrast salad combining sweetness, salt, acidity, crunch, and cooling freshness for people navigating reduced taste.

Ingredients
- 60g extra-virgin olive oil
- 30g red wine vinegar
- 750g seedless watermelon, cubed
- 250g crumbled feta
- 250g cucumber, thinly sliced
- 175g red onion, finely sliced
- 25g fresh mint, finely chopped
- 1/2 tsp salt (optional)
Method
- Cut the seedless watermelon into small cubes.
- Thinly slice the cucumber into semi-circles.
- Finely slice the red onion and soak in cold water for 15 minutes.
- Drain excess liquid from the watermelon and feta.
- Combine the feta, cucumber, and watermelon in a large bowl and gently mix.
- Remove the red onion from the water, pat dry, and add to the salad.
- Add the finely chopped mint.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, and optional salt.
- Transfer the salad to a flat serving plate.
- Pour the dressing over the salad just before serving.
Notes
Best served immediately after preparation. The watermelon naturally releases water over time, which can soften the texture of the salad.
