Creamy, spicy Italian sausage pasta with parmesan, chilli flakes, and baby spinach.

Christine's Spicy Italian Sausage Pasta

Ingredients

  • 500g Hot Italian sausages
  • 450g penne pasta
  • 500g 35% cream
  • 250g parmesan
  • 1/2 white onion
  • 1 teaspoon chilli flakes
  • 500g baby spinach
  • Olive oil

Method

  1. Boil the penne pasta until cooked, then drain and set aside.
  2. Dice the onion.
  3. Add a splash of olive oil to a pan and sweat the diced onion over medium heat until softened.
  4. Remove the casing from the sausages.
  5. Break up the sausage meat and add it to the onions.
  6. Cook the sausage until browned.
  7. Add the cream slowly, stirring as you go to help maintain the pan temperature.
  8. Stir in the parmesan until melted into the sauce.
  9. Add the chilli flakes.
  10. Add the baby spinach and stir until wilted.
  11. Once the pan comes back up to temperature, add the cooked penne.
  12. Stir until the pasta is fully coated in the sauce.

Notes

All ingredients should be at room temperature before cooking.
