Chicken & Lemon Meatballs
Fresh, juicy chicken meatballs with lemon, feta, garlic, and herbs that create brightness and savoury contrast.

Ingredients
- 500g boneless chicken thighs
- 1 lemon
- 140g feta cheese, crumbled
- 4 garlic cloves
- 1/2 red onion
- 1 tsp cumin powder
- 1 tsp oregano
- 1 tsp parsley
- 1 tsp mint
- 1 large egg
- 70g panko breadcrumbs
Method
- Mince the chicken thighs, leaving some coarseness for texture.
- Zest and juice the lemon, discarding the pith.
- Finely chop the garlic and red onion.
- Combine the chicken, lemon zest, lemon juice, feta, garlic, onion, herbs, egg, and panko in a large bowl.
- Mix until evenly combined.
- Roll the mixture into approximately 15ml (tablespoon-sized) meatballs.
- Heat a tablespoon of oil in a frying pan over medium-high heat.
- Sear the meatballs until golden brown, about 2 minutes per side.
- Lower the heat, cover, and cook for another 5 minutes until cooked through.
- Finish with extra lemon juice and optional salt and pepper just before serving.
Notes
Test the meatballs in the pan by pressing gently with the back of a fork. If they flatten easily they are undercooked. If they feel very firm they may be overcooked.
