Burrata Tonnato Salad
Creamy, salty, fresh, crisp, hot.

Ingredients
- 1 tin of tuna in olive oil
- 250g burrata or fresh mozzarella
- 4 tbsp mayonnaise
- 450g cherry tomatoes
- 100g fresh garden peas
- 1 stick of celery
- Arugula
- 6 anchovy fillets
- 1 lime, juiced
- 1 green chili
- 1 garlic clove
- 1/2 tsp white pepper
- Olive oil
- Rock salt
- Black pepper
Method
- Make the tonnato by blending the tuna and its oil with the anchovies, lime juice, white pepper, garlic, and green chili.
- Once smooth, continue blending slowly and add the mayonnaise until the mixture is silky.
- Cover a salad plate with arugula.
- Sprinkle the garden peas evenly across the salad plate.
- Thinly slice the celery and sprinkle it evenly across the plate.
- Tear the burrata and spread it evenly across the plate.
- Cut the cherry tomatoes in half and distribute them across the plate.
- Drizzle the tonnato over the salad.
- Drizzle olive oil over the salad.
- Sprinkle with rock salt and ground black pepper.
Notes
The tonnato can be made in advance, but the salad will become soggy if constructed too far ahead of time.
